KAMM Chocolate at Giselle Miami: Cacao Meets Wine & Spirits Above Downtown Miami
On Wednesday evening, KAMM Chocolate joined Miami’s wine and spirits community at Giselle Miami, one of Downtown Miami’s most distinctive upscale rooftop dining destinations. Perched above the city with its dramatic indoor-outdoor setting, Giselle provided an elegant backdrop for Hot Grape Summer, a portfolio tasting bringing together more than 75 wines and spirits from independent wineries, winemakers and craft producers.
Representing KAMM for the evening, David Karas introduced guests to the world of Ecuadorian cacao and KAMM’s approach to fine chocolate, placing cacao alongside wine and spirits as a product of origin, agriculture, fermentation and craftsmanship. The official event program featured David as “representative for Kamm”, alongside winemakers, winery owners and spirits representatives.
The evening brought KAMM into conversation with an eclectic group of producers and members of the South Florida wine community, including Matiari Tequila, Marchelle Wines, WineSmith Wines, Gang Family Cellars, Pépin Vin, Achillée and Sisters of the Vine South Florida.
It was a particularly natural environment for KAMM. Just as wine expresses grape variety, vineyard, vintage and winemaking decisions, fine cacao carries its own sense of origin—from genetics and growing conditions to fermentation, roasting and the choices made by the chocolate maker. For guests accustomed to evaluating wine and spirits through aroma, texture, acidity, fruit, spice and finish, tasting chocolate through the same sensory lens opens an entirely different way of experiencing cacao.
That connection was at the center of KAMM’s presence at Giselle: bringing Ecuadorian cacao into the broader conversation around fine wine, artisan spirits and gastronomy in Miami.
KAMM’s participation also reflects a growing part of the brand’s work in South Florida—creating opportunities for people to experience Ecuadorian fine aroma cacao, craft chocolate and chocolate pairing beyond the traditional idea of chocolate as simply a dessert.
From the vineyards of California and France to agave from Mexico and cacao from Ecuador, Wednesday night at Giselle was ultimately about something shared by every producer in the room: place, craft and the transformation of an agricultural ingredient into an experience.
